We grow two hardneck varieties of garlic. They are called Music and Chesnok Red. Music produces a very strong garlic profile, whereas Chesnok Red has a milder flavor and a beautiful pinkish-purple skin.
Both varieties we grow work well in almost any cooked dish. From stir fries and roasts to soups and pestos, garlic’s versatility is on par with onions. It’s a powerhouse, a staple in our home, and a pleasure to grow and harvest.
Mature garlic is typically harvested in early July, but green garlic, the immature form of the crop, is harvested in May, when the plant has a fresher and milder taste.
In early June, the plants produce scapes, which are the budding flowers. We harvest the scapes before the flowers bloom to promote the bulbs’ growth. These periods of the crop’s development only last for a few short weeks but provides two bonus harvests—spring delicacies indeed!
