Tomato & Cucumber Salad

A refreshing and easy salad to throw together during the summer. Add any herbs that you want to switch it up.

Ingredients

1 lb. tomatoes, cubed or diced

2-3 cucumbers, cubed or diced

(I don’t bother peeling my cucumbers because I like the flavor)

Scallions or red onion, chopped

Olive oil

Red wine or apple cider vinegar

Pinch of salt and pepper

Chopped, fresh herb of your choice—parsley, basil, mint…

Steps

  1. Depending on how large you want your pieces, cube or dice the tomatoes and cucumber. Chop onions or scallions.

  2. Combine tomatoes, cucumbers, onions, and fresh herbs in a bowl.

  3. Drizzle with oil and vinegar. Sprinkle with salt and pepper. Adjust seasonings to your taste. Enjoy!
