We plant garlic in November, just before winter sets in. This gives the plant enough time to get established before winter but not enough time for it to sprout leaves, which shouldn’t happen until the spring.

For some crops, the planting window is quite large, whereas other crops have a pretty narrow range of conditions during which the seed or transplant needs to be in the ground. Of course, the weather is always changing, so rule-of-thumb estimates need to be adjusted sometimes.
